Evan’s Corner Coleslaw Recipe and a Bonus

We’re sharing Evan’s coleslaw recipe because lots of members have been asking about it from the October Evan’s Corner issue. The coleslaw is absolutely delicious! As a bonus, he’s sharing his famous Monster Cookie Bar recipe. Give them a try!

Curried Coleslaw with Apples and Raisins

½ medium head (I pound) red or green cabbage,
1 teaspoon salt
1 large carrot, peeled and grated
¼ cup of raisins
1 medium apple, cored and diced
½ cup dates or figs
¼ teaspoon celery seed
1 teaspoon curry powder
6 tablespoons vegetable oil
¼ cup rice wine vinegar
½ cup water

  1. Combine the cabbage and salt in a colander over a bowl with a plate on top weighed down by a heavy bottle. Let stand until the cabbage wilts, at least 1 hour and up to 4 hours.
  2. Pour the draining liquid from the bowl; rinse and dry the bowl. Transfer the wilted cabbage and carrot to the bowl.
  3. Combine the celery seeds, vegetable oil, rice wine vinegar and the curry powder with a very generous half cup of diced whole dates or figs. Add a half cup of water. Put all of this in a blender, (a food processor would also work), and give it a blend.
  4. Combine the raisins, apple, cabbage, carrot, and dressing and enjoy.

Monster Cookie Bars

2/3 cup butter, room temperatureMonster Cookie_
2  cups light brown sugar
1 1/3 cups white sugar
4 eggs
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
1 tablespoon maple syrup
2 cups crunchy peanut butter
6 cups old fashioned oats
1 cup semi-sweet chocolate chips
3 cups M&M candies, for topping, (more M&M’s is better, the chocolate taste is incredible.)

  1. Preheat oven to 350 degrees. Beat together the butter and sugars. Add the eggs, vanilla, syrup, and baking soda. Stir in the peanut butter. Add the oats and stir again until well combined. Mix in the chocolate chips.
  2. Divide the dough into two pieces and press each one into a large cookie sheet. Leave lots of room at the edges because the bars will expand. Top with lots of M&M’s and lightly press them into the dough. Bake for 16-17 minutes, until the bars are lightly browned and just past looking wet on top. They will not be firm, but they will set up as they cool.
